There is a chance your phone limits 60fps to its own camera app only. The camera probe linked there will show the detected options.
Unfortunately yes, the reason for this unknown and makes no sense. Generally it's Samsung devices that do this. Google Pixel, OnePlus, and Motorola should be safest options.

Hey, i have now a Google Pixel 8, the image is perfect. But the sound is cracking regulary. I'v try all the settings, and the sound is still crakling regulary. Any idea ?
Unfortunately streaming audio perfectly with a low delay is very difficult. It's highly recommended to keep DroidCam for video-only, and use an actual microphone for audio.
You can try to fix the crackling by unchecking the "Unbuffered Output" option in your DroidCam source and then adding a delay to the source. See the "Audio choppy" entry at https://droidcam.app/obs/usage/#faq
