encoder lag

So, I am trying to record gameplay for YouTube. I want to use OBS, as Shadowplay not only has shitty audio quality, but it records in VFR. So, Shadowplay is out of the question. However, when I record in OBS, I ALWAYS get the "encoder overload" message, no matter what settings or encoder I use...

So in OBS > Settings > Advanced > Process Priority: High But I still get some encoding overload. I recently turned off game mode which got me out of the 50%+ overloads. I'm still around 3-12% at times. I manually switch OBS priority in task manager to High (default is normal) and the % is around...
