"Capture Card Device" vs "Video Capture Device"

On the latest version of OBS (31.1.1) for macOS there are two capture card source types:
  1. Capture Card Device
  2. Video Capture Device
Why are there two different types? Which of these two sources are you actually supposed to use for a modern capture card? And why should you use one over the other?
